How is the cloud service different from the Chrome extension?

What data do you store?
Your email, subscription status, lunch window configuration, and fake-meeting title pool. Nothing about meetings outside your lunch window. Your real meeting contents, attendee lists, and any event we did not create ourselves are never stored.
What OAuth scope does it use?
calendar.events (Google) or Calendars.ReadWrite.Shared (Microsoft) — both write-only equivalents. The service can create new events but cannot read your existing meetings.
